Boho-Tropical Inspired Menu

Pineapple Chicken Teriyaki Tostada

Teriyaki Sauce
⅓ cup Soy Sauce
¼ cup Fresh Lime Juice
¼ cup Pineapple juice
⅓ cup Honey
⅓ cup Ketchup
1 teaspoon sesame oil
2 clove garlic minced
1 tablespoon fresh ginger root grated
1 green onion minced

Make the teriyaki sauce and save half for basting. Marinate chicken for 4 hours or overnight. Simmer the reserved sauce and add cornstarch to thicken. Bake the chicken at 425°F for 25 minutes or air fry it. Broil for 3-5 minutes or until brown. Shred the chicken and toss it in the sauce. Put it on a baking sheet and broil again. Be careful not to burn yourself if using a crockpot.

Place the baking sheet on the top oven rack and broil for 4-6 minutes or until the chicken has crisp edges.

Tostadas
6 Extra Thin Corn Tortillas,
½  Cup Cotija Cheese, crumbled
6 Tbsp Pico de Gallo

2 cups Guacamole 1-2 pinches Chopped Cilantro, optional
Heat your oven to 400F. Put 6 tortillas on the oven rack or wire rack and toast for 6-8 minutes until crispy. Add 3 ounces of chicken, guacamole, salsa, cheese, cilantro, and other toppings on top of each toasted tortilla.

Sauteed Shrimp w/ Dragon Fruit Salsa

Dragonfruit Salsa
1 dragonfruit (red or white)
2 medium fresh tomato stems removed
½ medium red onion
2 serrano or 1 jalapeño pepper– stems, ribs, and seeds removed (less or more to taste)
Juice of 1 lime
½ cup chopped cilantro
Kosher salt and freshly ground black pepper to taste
1 pinch dried oregano (crumble in your fingers before adding), or more to taste
1 pinch ground cumin, or more to taste

Prep the Ingredients: Cut up the tomatoes, chili peppers, and onions. Be cautious when handling the chili peppers. Cut the dragonfruit into tiny pieces. Handle them in a plastic bag or gloves. Wash your hands well with soap and hot water afterward, and avoid touching your eyes for a few hours.
Set aside some of the peppers’ seeds. If the salsa isn’t hot enough, add a few for more heat.

Make the Salsa: Put everything except the dragonfruit in a food processor and pulse a few times until the ingredients are finely diced but not pureed. Transfer all ingredients to a serving bowl and mix in salt and pepper to taste.

Sauteed Shrimp
3 Tbsp melted butter
2 Tbsp bourbon optional
2 Tbsp brown sugar
1 Tsp paprika
1 Tsp ground ginger
½ Tsp onion powder
½ Tsp black pepper
1 pound extra-large shrimp peeled and deveined
Whisk together the butter, bourbon, brown sugar, paprika, ginger, onion powder, and black pepper in a small bowl.
Over medium heat, add the uncooked deveined shrimp to be sauteed in a saute pan. Liberally pour the seasoning mixture over the shrimp until fully cooked. Set aside to serve with the Dragonfruit salsa.

Coconut Rice Cakes w/ Mango Sauce

Rice Cakes
1 ½ cups Mahatma® or Carolina® Jasmine Rice, cooked
¼ cup shredded carrots
1 cup all-purpose flour
2 Tsp baking powder
1 Tsp salt
2 Tsp seafood seasoning
¼ cup green onion, finely chopped
¼ cup cilantro, chopped fine
¼ cup (1/2 stick) butter, melted
3 eggs, lightly beaten
2 tablespoons shortening or vegetable oil
1 can (14 oz) lite coconut milk, divided
Combine cooked rice, carrots flour, baking powder, salt, seafood seasoning, green onion, and cilantro in a mixing bowl. Add melted butter, coconut milk, and beaten eggs. Mix gently. Heat 1 tablespoon of vegetable oil in a non-stick skillet. Drop a heaping tablespoon of shrimp mixture into the skillet and flatten it slightly. Cook cakes in batches for 5 minutes on each side until they are golden brown. Add more oil if needed.

Mango Sauce
2 Tsp butter
2 garlic cloves, peeled and finely chopped
1 Tbsp green onion, finely chopped
1 Tbsp cilantro, finely chopped
2 Tbsp fresh ginger, peeled and finely chopped
½ Tsp salt
¼ cup mango jam (or may substitute apricot or peach jam)
Melt butter in a pan and add garlic, green onions, cilantro, and ginger. Cook for 4 minutes until it smells good. Add salt and jam and cook for 2-3 more minutes. Add coconut milk and cook for 5 minutes while stirring occasionally. Remove from heat and keep warm.

Cocktails

Virgin Islands Mule

1 Tbsp Fresh Lime Juice
1 cup homemade ginger beer
1 oz Arc Lemongrass Vodka
Add ice in a mule cup, pour the vodka, ginger beer, and lime juice. Stir lightly and enjoy. Adjust to taste.
Caribbean Rum Punch
Soursop (Guanabana) Mojito
6 fresh mint leaves
1 Tsp sugar
2 limes wedges
1 Tbsp Soursop (guanabana) nectar
3 Tbsp white rum (eh– up this if you want)
¼ cup club soda (sub for a lightly flavored seltzer water)
Muddle the mint, sugar, and lime wedges in the glass you will use for serving. Add ice and top with the nectar, rum, and soda
